Time: 30 Minutes
1 cup frozen peas - cooked
2 cups zucchini - grated
1/4 teaspoon salt
1/2 cup self raising flour - might need more if the zucchini are very watery.
1 teaspoon grated lemon zest
2 eggs - lightly beaten
1/3 cup crumbled feta cheese
1-2 ripe avocados
1 tablespoon lemon juice
salt and pepper to taste
200g Belhaven Cold Smoked Sea Reared Trout
In a large bowl combine the cooked peas, grated zucchini, lemon zest, eggs, feta and flour. The batter will be quite loose. (If very runny add a little more flour.)
Fry tablespoons of the mixture in a little oil for approx 2+ minutes on each side until golden.
Serve the fritters with a large spoonful of smashed avo and a couple of pieces of cold smoked trout. Garnich with salad and beetroot hummus if desired.
