4 slices of bread
Salt and pepper
Handful of rocket
150g Belhaven Cold Smoked Salmon or Cold Smoked Trout
Whisk the eggs. Season with salt and pepper.
Heat a frying pan and add a small chunk of butter.
Dip the bread into the whisked eggs, covering both sides, and place in the hot pan.
Cook on both sides until golden brown.
Serve with cold smoked salmon or cold smoked trout, a little sprinkling of black pepper, and some rocket on the side.
